GRAPE VARIETY:
100% Cortese.

 

SOIL COMPOSITION:

Soil coming from the disintegration of the tuff (sea deposit) of ancient sea, obtaining a wine of great finesse with excellent aromas.

 

AVERAGE PLANTING YEAR:
1990, traditional Guyot.

 

HARVEST:
Manual, first week of October.

 

VINIFICATION AND AGEING:

Careful selection before de-stemming and pressing. The must obtained, aer the natural decantation, is left to ferment in stainless steel tanks. The alcoholic fermentation lasts about 20 days and takes place at a controlled temperature of 18 degrees. The permanence of the wine on indigenous yeasts lasts for about 4 months.

PRESTIGIO, Cortese selected for the Gavi di Gavi production is the top one, the most prestigious (Prestigio is the Italian translation) of the company..

Excellent as an aperitif, it accompanies appetizers and first courses with fish or vegetables, as well as fresh cheeses of short seasoning.
